Polyphenols are substances found in small quantities in plant foods. Like Vitamin C and Vitamin E, they are antioxidants that protect the body’s tissues from free radicals. So, what exactly are free radicals? Free radicals are molecules that lack an electron. If you remember all the way back to seventh grade science class, the electrons found in molecules like to be in pairs. Since free radicals lack an electron, they try to steal it from important structures in our cells like our DNA. Polyphenols donate an electron to stabilize free radicals. By doing this, they protect our body from free radical damage. As you can imagine, a diet high in polyphenols has many benefits.
